Churrascaria lamb skewers

Simple lamb skewers recipe inspired by a summertime South American churrascaria. This recipe comes together quickly; just make sure you've fired up the grill ahead of time.



Ingredients

  • 1kg lamb leg steaks

  • 60ml of red wine vinegar

  • 60ml of olive oil

  • 3 garlic cloves, crushed

  • 2 tsp sweet smoked paprika

  • 1 tsp lemon zest

  • 2 tbsp of thyme leaves, chopped

  • 2 red peppers

  • 2 red onions,

Sause

  • 6 tbsp of mayonnaise

  • chopped coriander

  • 1 tsp jalapeños, chopped

  • 1 bunch of spring onions, chopped

  • 1 tsp dried garlic

  • 1 tsp ground cumin

Method

  1. Oil some metal skewers and set them aside

  2. Lamb steaks should be cut into 3cm pieces (about 40). In a medium bowl, combine the vinegar, oil, garlic, paprika, lemon peel, and thyme and marinate for 10 minutes while you prepare the sauce.

  3. Mix together all the ingredients for the ají sauce and set aside

  4. Alternate threading the red onion, red peppers, and lamb onto the skewers.

  5. Cook the skewers over medium-high heat on a barbeque or in an oiled griddle pan until browned all over and the lamb is cooked through for about 15 minutes.


Serve with the creamy aj sauce on the side.
