The warming spice paste complements the sweet, meaty flavour of lamb beautifully in this flavorful lamb and harissa burger recipe. Adding a generous dollop of mayonnaise or Greek yoghurt to the mix will help to cool things down.
Ingredients
500g of lamb mince
3 tbsp of harissa
1 handful of breadcrumbs
1 handful of coriander leaves
1 handful of mint leaves
1 handful of parsley leaves
1 tsp ground coriander
1 tsp fennel seeds
1/2 tsp salt
1 egg
4 brioche buns
1 handful of rocket
1 handful of coriander leaves
1 handful of mint leaves
extra virgin olive oil
1/4 lemon
pepperoncini
Method
In a mixing basin, combine all of the burger ingredients and stir thoroughly. Taste and adjust the seasoning and spice levels to your preference by frying a pinch of the mince in a hot pan.
Form the mixture into four even-sized patties
Cook the burgers in a smoking hot griddle pan or on the grill for 4–5 minutes on each side, finishing in the oven for a few minutes if necessary.
Toss the rocket with the herbs in a bowl, drizzle with extra virgin olive oil, and season with a squeeze of lemon.
Serve the burgers in brioche buns with your choice of herb salad and condiments — something creamy, like mayonnaise or plain yoghurt, combines well with the fiery harissa.
