Lamb and harissa burgers

The warming spice paste complements the sweet, meaty flavour of lamb beautifully in this flavorful lamb and harissa burger recipe. Adding a generous dollop of mayonnaise or Greek yoghurt to the mix will help to cool things down.



Ingredients

  • 500g of lamb mince

  • 3 tbsp of harissa

  • 1 handful of breadcrumbs

  • 1 handful of coriander leaves

  • 1 handful of mint leaves

  • 1 handful of parsley leaves

  • 1 tsp ground coriander

  • 1 tsp fennel seeds

  • 1/2 tsp salt

  • 1 egg

  • 4 brioche buns

  • 1 handful of rocket

  • 1 handful of coriander leaves

  • 1 handful of mint leaves

  • extra virgin olive oil

  • 1/4 lemon

  • pepperoncini

Method

  1. In a mixing basin, combine all of the burger ingredients and stir thoroughly. Taste and adjust the seasoning and spice levels to your preference by frying a pinch of the mince in a hot pan.

  2. Form the mixture into four even-sized patties

  3. Cook the burgers in a smoking hot griddle pan or on the grill for 4–5 minutes on each side, finishing in the oven for a few minutes if necessary.

  4. Toss the rocket with the herbs in a bowl, drizzle with extra virgin olive oil, and season with a squeeze of lemon.

  5. Serve the burgers in brioche buns with your choice of herb salad and condiments — something creamy, like mayonnaise or plain yoghurt, combines well with the fiery harissa.
