Tiramisu

This delectable tiramisu recipe uses sponge fingers and chocolate to make the classic coffee and Marsala dessert. This recipe may be prepped the day before and takes only 45 minutes to prepare, making it ideal for a dinner gathering.



Ingredients

  • 200g of ladyfingers

  • 2 eggs

  • 75g of caster sugar

  • 500g of mascarpone

  • 110ml of Marsala wine (Optional)

  • 4 tsp instant coffee granules

  • cocoa powder

Method

  1. To start, dissolve the coffee in 100ml hot water. 60ml Marsala stirred in and set aside to chill in a shallow pitcher or plate.

  2. In a mixing dish, whisk together the egg yolks and sugar until light and foamy.

  3. In a separate bowl, combine the remaining Marsala and the mascarpone, then fold it into the yolk mixture.

  4. Beat the egg whites with an electric mixer until soft peaks form in a clean basin, then gently fold them into the mascarpone mixture. Place the mixture in a piping bag and set it aside.

  5. Dip both sides of the ladyfingers in the cooled coffee to prevent the sponge from becoming entirely soft.

  6. Line the bottom of the glass or any dish with a layer of sponge, pushing it all the way to the edges, then top with a layer of cream. To create two unique layers, repeat with the sponge fingers and cream.

  7. Dust everything liberally with cocoa powder and place the glasses in the fridge for an hour to chill and set before serving
